Coco Plantains with a Smoky Turmeric Almond Queso. We all need a little more plantain in our lives! This amazing banana can be eaten green (like a potato substitute) or ripe (caramel flavours and sweet). This recipe from @wholimama_recipes is simple and tasty AF! Ingredients: - 1 ripe plantain - 1/4 cup coconut oil - Salt and pepper - 1/2 cup almonds (preferably soaked) - 1/2 cup water or unsweetened almond milk - 1 tsp #trulyturmeric - 1/4 tsp smoked paprika -1/4 tsp garlic powder - Lemon juice and chives for garnish - 1/2 tbsp nutritional yeast Method: Heat coconut oil in a frying pan on medium/high heat Cut plantains on a bias and shallow fry until golden brown on each side Place plantains on a paper towel and give them a generous sprinkle of salt Blend almonds, water, turmeric, garlic, smoked paprika, desired amount of salt and pepper, and yeast until smooth. You might have to add more water to get desired consistency. Slap that queso all over those plantains and garish with lemon juice and chives
